Souper Simple Tortellini Soup

This is a delishious one-dish meal that can be whipped up in a jiffy. I usually try to get the Buitoni Herb Chicken Tortellini in the fresh pasta section, but sometimes I can't get it...in that case any tortellini works great! I've even used this recipe with different flavored raviolis, like spinach and cheese! It's an easy dish to play with whatever you have on hand!
Ingredients:
2 tablespoons butter
1/4 cup onion, chopped
1/2 cup celery, chopped
1/2 cup carrot, chopped
3 garlic cloves, minced
1 -2 chicken bouillon cube, depending on personal preference
1 (10 ounce) package chicken-filled tortellini or 1 (10 ounce) package cheese tortellini
6 cups water
1 tablespoon fresh parsley, chopped
1/2 teaspoon ground nutmeg
1/4 teaspoon pepper
1/4 cup parmesan cheese, grated (optional)
Directions:
1. Saute onion, celery, carrots, and garlic in butter over medium heat until crisp-tender in a large stock pot or dutch oven.
2. Stir in water and boullion, and heat to boiling.
3. Add tortellini, and reduce heat to medium low.
4. Simmer 15-20 minutes or until tortellini are tender.
5. Stir in parsley, nutmeg, pepper. Sprinkle each bowl with cheese for garnish.
