i threw this together with ingredients on hand. it was very edible. measurements are approximate
Ingredients:
3 cups cooked and cooled brown rice
15 ounces black beans, drained and rinsed
10 ounces steamfresh corn, cooked and cooled
12 ounces pico de gallo, from the produce aisle
8 ounces feta cheese, crumbles
9 1/2 ounces wishbone bountifuls hearty italian dressing
salt and pepper
Directions:
1. cook brown rice and cool.
2. cook frozen corn and cool.
3. mix all ingredients in a large bowl.
4. season to taste.
