Having had a lot of dental work done around here lately, I was constantly coming up with new soups. This is a nice comforting soup; start out by simmering the turkey legs in broth with some cloves added; then add meat to the rest of the soup. If you can't find fideos, you can use thin spaghetti broken into 1 or 2-inch lengths. And, about an hour of the cook time is represented by the cooking of the drumsticks to be used in the soup.
Ingredients:
2 turkey drumsticks, skinned
6 cups chicken broth (add water if you don't have enough broth to cover drumsticks)
4 whole cloves
1/2 cup chopped onion
2 cloves garlic, minced
1 1/2 cups mushrooms, sliced
1/2 tablespoon olive oil
1/2 teaspoon thyme
1/4 teaspoon nutmeg
4 cups chicken broth
1 1/2 cups mushrooms, sliced
2 tablespoons flour
3 1/2 ounces fideos noodles
Directions:
1. Simmer turkey drumsticks in chicken broth with whole cloves until cooked through and very tender, about an hour.
2. Degrease, strain and reserve broth to use for the rest of the soup, or save for a different soup later (I find that the cloves flavor the turkey enough that I don't use the broth for this soup; but it's rich and delicious used in any other soup).
3. Remove turkey from the bones and shred.
4. In a large soup pot, saute onions, garlic and mushrooms in olive oil; do not brown.
5. Add chicken broth, thyme, nutmeg and turkey meat; simmer together for 30 minutes.
6. Remove 1/2 cup of soup broth from the pan in a small bowl; whisk dissolve the 2 tablespoons of flour in the hot broth and return to the soup pot.
7. In the meantime, cook the fideos in 1-1/2 cups of water until done (following package directions); drain fideos, adding their cooking water to the soup.
8. Simmer another 30 minutes, then add fideos and heat through, about another 15 minutes or until soup is thickened slightly.
