Ingredients:
2 tablespoons shortening |
1 cup uncooked regular rice |
1 small onion, chopped |
1 small green pepper, chopped |
1 clove garlic, minced |
2 large tomatoes, peeled and chopped |
2 cups water |
1 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Combine shortening and rice in a large skillet. Cook over medium heat until lightly browned. 2. Add onion, green pepper, and garlic; cook, stirring constantly, until tender. Add tomatoes, water, salt, and pepper; cover, and cook over low heat for 20 minutes. Serve immediately. |
