Ingredients:
2 tablespoons shortening
1 cup uncooked regular rice
1 small onion, chopped
1 small green pepper, chopped
1 clove garlic, minced
2 large tomatoes, peeled and chopped
2 cups water
1 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Combine shortening and rice in a large skillet. Cook over medium heat until lightly browned.
2. Add onion, green pepper, and garlic; cook, stirring constantly, until tender. Add tomatoes, water, salt, and pepper; cover, and cook over low heat for 20 minutes. Serve immediately.
