Ingredients:
6 cups self rising flour
2 cups corn meal mix
6 eggs separated
1/2 gallon buttermilk
1 tablespoon onion powder
2 tablespoons garlic powder
2 tablespoons black pepper
2 tablespoons paprika
peanut oil
stuffing
1 gallon whole pickled jalapeno peppers
1 pound ground beef
1 pound ground sausage
1 cup monterey jack cheese shredded
1 cup sharp cheddar cheese shredded
1 yellow onion chopped
Directions:
1. Mix all dry batter ingredients in a very large bowl.
2. Blend yolks with buttermilk and stir into dry ingredients until pancake batter consistency. Beat egg whites and fold into the batter then sauté onion in a little butter until done.
3. Fry beef and sausage together with onion until brown then drain well and mix in cheeses.
4. Drain peppers from can then wash well and cut each pepper open and remove seeds.
5. Stuff with ground meat mixture and after stuffed set in freezer for 1 hour.
6. After they have set in freezer one hour start dipping in batter and fry in deep fryer at 350. When golden brown remove and place on paper towels to drain well.
