Somen Noodle, Prawn and Cucumber Salad

Ingredients:
2 short cucumbers
100 g dried somen noodles
12 cooked king prawns, peeled deveined and cut halfway
3 spring onions, thinly sliced
1/2 teaspoon dashi, granules
1/2 cup rice vinegar
1/4 cup mirin
1 teaspoon shoyu
2 teaspoons fresh ginger
Directions:
1. cut cucumbers in half length wise, scoping out seeds and slice very thin. put in a colander sprinkle with salt and set aside 10 minutes.
2. mix dashi granules with 1 tsp hot water till dissolved. add rice vinegar, mirin, shoyu, ginger and sugar and stir. chill.
3. cook noodles until tender and drain. rinse under cold water until cool.
4. combine noodles, prawns, and onion. pour dressing over and serve.
