Solar Cooked Moroccan Egg Salad Sandwich Hold the Mayo

Ingredients:
1 medium garlic clove, minced (to taste)
1/2 teaspoon salt, to taste
1 teaspoon fresh black pepper, to taste
1 -2 teaspoon fresh lemon juice
3 tablespoons extra virgin olive oil
2 large solar cooked eggs, chopped
1/2 tablespoon flat leaf parsley, chopped (to taste)
2 slices bread
Directions:
1. Combine garlic, salt, pepper, and lemon juice in a small bowl. Stir together.
2. Add olive oil. Continue to mix until well-combined.
3. Add eggs and parsley into the bowl of dressing. Fold all ingredients together carefully.
4. Adjust seasonings to your taste.
5. Spread egg salad on one slice of bread & take another slice of bread to place on top.
6. Slice sandwich in half and serve.
