I whipped this up one day when I was short on ingredients, but in desperate need of snack now for the kids!!! I think they would have been much better with peanut butter, but was low on it as well and I didn't stir up the bottom of the jar very well and it was pretty dry!!! Some might think it a bit bland, but I have a child I have cut out most sugar for.
Ingredients:
3 cups quick oats
1 cup flour
1/3 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup craisins (or whatever you want)
1 cup chocolate piece (i shaved semi-sweet low pantry day!)
1/2 cup butter (used reduced fat)
1 cup light brown sugar (not packed)
1/3 cup corn syrup
1 (12 ounce) can evaporated milk (used fat free)
Directions:
1. Preheat oven to 325 degrees.
2. Grease a 9x13 dish.
3. Combine oats, flour, sugar, baking powder and cinnamon, craisins and chocolate in a bowl stir until mixed well.
4. On the stove melt butter, corn syrup, brown sugar and evaporated milk until they are blended together.
5. Mix wet and dry ingredients together, blending well.
6. Pour mixture into greased 9x13 dish.
7. Bake for 35 minutes.
