Ingredients:

  • 2 1/2 cups firmly packed brown sugar
  • 1/2 cup applesauce
  • 2 large eggs
  • 4 1/2 cups flour
  • 1 tbsp baking soda
  • 2 1/2 tbsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt

Directions:

  1. Pre heat oven to 350 degrees.
  2. In a large bowl stir together brown sugar, oil, applesauce and eggs until well incorporated.
  3. In a large bowl combine flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  4. Add sugar mixture and blend well.
  5. Roll dough into 2 inch balls and place on a cookie sheet.
  6. Bake for 10-12 minutes-the tops should be cracking and the sides JUST begining to brown.
