This is one I made up and we all love it. It is kind of like the corn cakes you get at Chi Chi's.
Ingredients:
1 cp. yellow corn meal
3/4 cp. flour
1 tsp salt
2 tsp baking powder
1 can cream style corn
1/2 cp sour cream
1 cp sharp cheddar cheese (optional)
2 tbs sugar (optional)
Directions:
1. Mix all ingredients together just till well mixed. Don't over mix.. They are delicious with or without the cheese or sugar. Pour into six large or 12 small muffin cups. Bake about 20 minutes for the small ones and 30 minutes for the large. They should be golden brown and crisp on the outside and soft on the inside. We love these with bean or split pea soup[.
