Soft Chocolate Chip Cookies

Everyone seems to love these cookies (except for my father who likes his cookies to be crispy, doesn't stop him from eating them though.) the recipe is easy enough, and very versatile, change the pudding and you change the cookies, but as with most cookies less is more (I'm particular to pistachio pudding with pistachio hearts and milk chocolate chips.)
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 cup butter, at room temp
3/4 cup brown sugar
1/4 cup white sugar
1 (3 1/2 ounce) package instant pudding mix
2 eggs, at room temp
1 teaspoon vanilla extract
2 cups chocolate chips
1 cup nuts (optional)
Directions:
1. Preheat the oven to 350 degrees.
2. Sift together the flour and baking soda and set aside.
3. Cream the butter and sugars, then add the pudding and mix until well blended, add the eggs and vanilla and mix.
4. mix in the flour.
5. Add the chocolate chips and nuts and stir until well distributed.
6. Drop rounded tablespoons onto a ungreased cookie sheet and bake for 10-12 minutes or until the edges are just browned.
