Don't let the lack of stars fool you! I accidentally forgot to add a cup of white sugar but the recipe has now been corrected. So sorry!! These cookies are great for shipping. They stay soft and they taste great! I sent them to my nephew in Iraq and he and his buddies devoured them in a sitting. You can substitute chocolate chips or dried cranberries and vanilla chips for the raisins to bring variety.
Ingredients:
3 eggs
1 cup raisins
1 teaspoon vanilla
1 cup brown sugar
1 cup white sugar
1 cup shortening
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 cups oats
1/2 cup walnuts, chopped
Directions:
1. Preheat oven to 350 degrees.
2. In a small bowl, combine eggs, raisins, and vanilla. Let stand one hour in refrigerator.
3. In a large bowl, cream sugars and shortening.
4. Stir in egg mixture.
5. In a separate bowl, mix together, flour, baking soda, salt, and cinnamon. Add to creamed mixture.
6. Add oats and walnuts.
7. Form into small balls and bake for 10 to 12 minutes.
