This is a salad I made frequently in the past and have recently revisited.
Ingredients:
1/4 ripe mango, diced
1/2 ounce wasabi peas
1 tablespoon cottage cheese, california style
5 ounces lettuce
1 tablespoon light ranch dressing
Directions:
1. In a salad bowl, add lettuce, mango, cottage cheese, wasabi peas and dressing.
2. Toss.
3. Enjoy!
