Ingredients:

  • 1/2 cup sugar
  • 1 cup (2 sticks) butter or margarine
  • 1 1/2 cups chopped nuts (optional)

Directions:

  1. Preheat oven to 325°F.
  2. Line jelly roll pan (aka cookie sheet) wih foil, overlapping the sides.
  3. Line pan with soda crackers (saltines)in a single layer, to cover pan.
  4. Stir and boil together sugar and butter in a small saucepan
  5. For 3 minutes.
  6. Pour sugar/butter mixture over crackers and spread evenly.
  7. Bake for approximately 8 minutes...it will be golden and bubbly but not brown.
  8. As soon as it is out of the oven, sprinkle approximately 12 ounces
  9. Of chocolate chips on top of the crackers.
  10. Put pan back in oven for about 1 minute to help chocolate melt.
  11. Remove and spread chocolate with a knife.
  12. Sprinkle 1 1/2 cup chopped nuts on top of chocolate, covering all.
  13. Press slightly so nuts adhere to chocolate.
  14. Put pan in freezer and cool for approximately 30 minutes.
  15. Peel back foil gently from cookies and break cookies
  16. Into pieces. Keeps best in a covered container in the refrigerator.
  17. (I use pecans....I roast them in the oven for about 5 minutes for optimal flavor, then finely chop them.)
  18. These are really good and unusual....easy, too! I wouldn’t use margarine unless I had no choice.
  19. Number of servings really vary.
