8 ounces soba noodles
3 tablespoons vegetable oil
1/2 lb firm tofu, cut into 1/2-inch cubes
4 carrots, julienne
1/2 lb prepped shiitake mushroom
1 1/2 cups thinly sliced scallions
2 tablespoons chopped ginger
2 teaspoons sesame oil
1 tablespoon soy sauce
2 tablespoons seasoned rice vinegar
1 tablespoon toasted sesame seeds
Directions:
1. Boil 5 quarts salted water for noodles.
