Soba Ginger Salad

Adapted from Splenda for a main-course meal. Delicious!
Ingredients:
1 tablespoon grated ginger
3 tablespoons splenda granulated
1 tablespoon ketchup
1/4 cup low-sodium soy sauce
1/2 teaspoon chile garlic sauce
2 tablespoons water
2 tablespoons lime juice
4 oz cooked and peeled shrimp
2 oz dry soba noodles, cooked
2 cups mixed salad greens
Directions:
1. Place ginger, Splenda, ketchup, soy sauce, chili garlic sauce and water in a medium saucepan.
2. Simmer for 1-2 minutes, and remove from heat.
3. Add lime juice and mix well.
4. Stir in shrimp and noodles.
5. Divide greens between 2 bowls, and top with noodle and shrimp mixture.
6. Serve warm or cold.
