Ready, Set, Cook! Special Edition Contest Entry: I created this recipe based on a description of a dish my husband described to me-that his grandmother made when he was a child. I've made many different verisons of my basic recipe over the years. Using Simply Potatoes Diced Potatoes with Onions really cut my prep time! The whole family loves this dish-including my grandkids! I usually make a loaf of bread in the breadmaker when any of them join us for dinner. The aroma of this stew simmering on the stove is SO inviting! Hard to believe it is so easy to make!
Ingredients:
1 (20 ounce) package simply potatoes diced potatoes with onion
1 (14 ounce) package smoked polish kielbasa (cut into 1/4-inch thick slices(then slices quartered)
1/2 cup sliced green onion
1/4 cup chopped red bell pepper
3 cups chicken broth
1 (14 ounce) can great northern white beans (rinsed & drained)
1 large garlic clove (finely chopped)
1/4 teaspoon oregano leaves (crushed)
1/4 teaspoon black pepper
1/4 teaspoon caraway seed
1/2 tablespoon white wine vinegar
1/4 teaspoon paprika
2 tablespoons sliced green onion tops
Directions:
1. Cook and stir the sausage in a large skillet over medium heat til lightly browned. Remove with slotted spoon and drain on paper towels. Place sausage in a soup pot or Dutch oven. Add all remaining ingredients EXCEPT Paprika and green onion tops. Bring to a boil over medium-high heat-stirring occasionally. Reduce heat, cover and simmer 15 minutes-stirring now & then. Stir in the Paprika and green onion tops. Cook just until stew is piping hot. Ladle into large serving bowl or individual bowls and serve. Crusty buttered bread of your choice is the perfect accompaniment to this dish.
