So Good Roasted Corn Grits

If you have ever had the pleasure of dining at Zea's Restaurant, then you know what I'm talking about! These are not the regular grits we eat for breakfast, but smooth and creamy grits used as a side!
Ingredients:
2 cups water
2 cups heavy cream
1 cup yellow grits
1/2 pound butter
1/2 tablespoon salt (adjust to taste)
dash pepper
1 to 2 ears fresh roasted corn, kernels removed(you can do this on a grill or in the oven)
sliced green onions(about 2 teaspoons)

2. In Medium pot, bring water and cream to a boil.
3. Stir in grits and lower heat to low/med.
4. Add butter and cook at a low simmer for about 15 to 20 minutes or until thickened and creamy.
5. Add corn and green onions. ( I sometimes roast my corn kernels on the stove in a pan)
6. *If using quick cook golden grits, adjust time needed to cook.
7. These go well with fried or grilled fish, chicken, pork or turkey! Yummy!
