A great tropical margarita. From Martha Stewart with a few adaptations.
Ingredients:
1 cup sweetened flaked coconut
1/2 teaspoon salt
1/2 cup fresh lime juice, plus
2 tablespoons fresh lime juice (about 5 limes)
1/4 cup cream of coconut
1/2 cup tequila, plus
2 tablespoons tequila
1/4 cup triple sec
1 cup ice
Directions:
1. Preheat oven to 350 degrees. Place coconut and salt on a shallow baking pan and mix. Spread evenly and toast in oven, stirring often, until golden, about 8-10 minutes.Let cool, then crush with your hands until crumbly.
2. Pour 2 Tb lime juice in a shallow dish, place coconut in another. Dip the rims of two cocktail glasses in lime juice, then in coconut, coating well.
3. Combine remaining ingredients in a blender. Puree until smooth. Divide among prepared glasses and serve!
