This cheesecake has a very white surface which is why it is called a Snow White Cheesecake. The reason it is so white is due to the egg whites. The combination of the cream cheese and 2 cups of sour cream give the cheesecake a distinctive and delicious flavor.
Ingredients:
crust
1 1/2 cups graham cracker or digestive biscuit crumbs
6 t butter, melted
1/4 cup granulated sugar
1 pound cream cheese
1 tsp vanilla extract
1 cup granulated sugar
2 cups sour cream
4 egg whites
1 tsp confectioners' sugar
Directions:
1. Preheat the oven to 350 degrees.
2. Place the crumbs in a bowl and add the butter and sugar.
3. Blend well.
4. Press the crumb mixture onto the bottom and partly up the sides of a greased springform pan.
5. Make sure the mixture is smooth along the bottom.
6. Bake for 10 minutes.
7. Cool before filling.
8. Preheat the oven to 350 degrees.
9. In a large mixing bowl, beat together the cream cheese, vanilla and sugar.
10. Add the sour cream slowly to the mixture.
11. Beat the egg whites until they form soft peaks.
12. Then add the confectioners' sugar and continue beating until they form stiff peaks.
13. Fold the egg whites into the cream cheese mixture.
14. Pour the mixture into the prepared crust and bake for 1 hour.
15. Allow to cool in the oven with the door propped open.
16. Transfer to counter to let it adjust to room temperature.
17. Chill.
