No shortening required! These cookies don't last long enough to pull a second batch out of the oven. If you like your cookies light and fluffy use real butter, for soft chewy cookies use margarine.
Ingredients:
1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground cinnamon
5 tablespoons sugar
Directions:
1. Preheat oven to 350 F.
2. Cream butter and sugar together.
3. Beat in eggs one at a time.
4. In a separate bowl, sift together flour, cream of tartar, baking soda and salt.
5. Slowly mix dry ingredients into the butter mixture.
6. Mix together cinnamon and sugar (just like you would for cinnamon toast).
7. Roll/Press teaspoonfuls of batter into balls (approx 1 inch diameter).
8. Roll the balls in the cinnamon-sugar mix.
9. Place on greased cookie sheet about 2 inches apart (DON'T PRESS THEM).
10. Bake approx 10 min until the cinnamon coating looks cracked.
11. Cool on cooling rack.
