SMOKY BAKED LIMAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Morgan Estate in Austin, Texas in 1982.
Ingredients:
1 pound dried small lima beans
1 large white onion chopped
1/2 pound smoked sausage
1/4 cup lightly packed brown sugar
2 tablespoons dijon-style mustard
1 teaspoon worcestershire sauce
1 garlic clove crushed
1/4 cup molasses
1/4 cup ketchup
1/8 teaspoon ground cloves
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
Directions:
1. In 4 quart saucepan combine beans and 2 quarts water then boil 2 minutes.
2. Remove from heat and cover then let stand 1 hour then add onion and bring to a boil.
3. Cover then reduce heat and simmer 1-1/2 hours.
4. Cut several slices smoked sausage and set aside then dice remaining sausage.
5. Drain beans and reserve liquid.
6. Combine all ingredients except beans and mix well then gently stir in drained cooked beans.
7. Bake at 300 for 2 hours adding reserved bean liquid as needed.
8. Garnish with reserved sliced sausage.
