This savory appetizer is a real crowd pleaser so make two batches. I make mine ahead of time and use my food sealer to store in the freezer until ready or just in the fridge if they will be eaten within the week. Read more . High nutrition, good spice and low calorie. What's not to like.
Ingredients:
3 cup squash, zucchini - thinly sliced
1 cup bisquick heartsmart mix
1/2 cup onions, raw, minced
1 tsp minced chipotle pepper in adobe sauce
1/2 cup grate-it-fresh parmesan cheese
2 tbsp parsley fresh
1/2 tsp salt
1/2 tsp oregano, fresh
1/4 tsp ground black pepper
1/4 tsp spices, cayenne pepper
1/4 cup vegetable oil
1 cup egg beaters
* 1/4 cup apple sauce natural
Directions:
1. Heat oven to 350ºF. Grease bottom and sides of rectangular pan, 13x9x2 inches.
2. Thinly Slice the zuccini, mince the onion, mince the parsley and oregano and toss all together and set aside. I also through in one minced chipotle pepper in adobe sauce because I like that smokey heat.
3. In a separate bowl mix the egg, oil, apple sauce, salt and pepper.
4. In a gigantic mixing bowl pour in the baking mix and Parmesan and mix together well. Then pour in the egg mixture and beat together until you are lump free. Then add the veggies and mix well again.
5. Spread in pan and give it a good shake so that all is evenly distributed.
6. Bake about 30 - 40 minutes or until golden brown. Cut into 2-inch squares; cut squares diagonally in half into triangles
