Ingredients:
8 slice(s) italian or sourdough bread cut 1/2 inch thick
2 tablespoon(s) extra virgin olive oil
3 tomatoes (medium sized) chopped
2 clove(s) garlic pressed
1/3 cup(s) oil packed sun dried tomatoes chopped
1 tablespoon(s) balsamic vinegar
2 tablespoon(s) fresh basil chopped
1 clove(s) garlic pressed
kosher salt and freshly ground pepper to taste
extra virgin olive oil
1-2 cedar planks
Directions:
1. Soak plank(s) for 30 minutes in salted water. and heat grill to medium high. For toast, mix olive oil with fresh garlic and a dash of salt and pepper. Brush bread slices on both sides with olive oil mixture and place on hot plank. Grill until lightly golden brown, turning once for a total of 5 to 7 minutes. Remove from grill.For topping, mix all topping ingredients together. Spoon topping onto toasted bread and return slices to grilling plank. Close lid and grill for another two to three minutes, or until hot and crisp.
