Another venture into crockpotting for me. I had odds and ends in the fridge and freezer so it was time to make up a pot of something. So here is my first crockpot chili recipe
Ingredients:
2 tbsp olive oil
1 medium onion, chopped
4 cloves garlic, minced
2 stalks celery, chopped
1 green pepper, chopped
1 15oz can chili beans, undrained
1 15oz can dark red kidney beans, drained
1 15oz can light red kidney beans, drained
1 15oz can stewed tomatoes, undrained
1 15oz can diced tomatoes, undrained
2 cups beef broth, low sodium
1 lb ground beef, cooked and well drained
2 links new braunfels cheddar smoked sausage
3 tbsp chili powder
1 tbsp cumin
1 tbsp sweet basil
1 tbsp cilantro
1 tbsp salt
1 tsp crushed red pepper
5 baby carrots
Directions:
1. Crockpot on high - 2-3 hours
2. Heat oil in a large skillet and saute the onion, garlic, celery and green pepper.
3. Dump the veggies, beans and broth in the crockpot. Mix well.
4. Add the tomatoes mix well.
5. Halve and slice up the sausage. Add that and the crumbled ground beef to the pot. Mix well.
6. Toss in the baby carrots. These are used to cut the acid. They can also be used as a game prize. You know like, the one to find and eat the first carrot doesn't have to do the dishes.
7. Distribute the spices across the surface of the mixture. Mix really really really well.
8. Go do something fun and come back for dinner.
