Ingredients:
165 grams corn
95 grams red bell pepper, chopped
140 grams grape tomatoes
285 grams black beans
325 grams smoked turkey breast
1/2 cup red onion, chopped
1 tablespoon garlic, minced
1/2 cup tomato juice
1/4 cup mint, chopped
2 tablespoons lemon juice
1 tablespoon balsamic vinegar
1 tablespoon olive oil
Directions:
1. Combine garlic, tomato juice, lemon juice, mint, vinegar and olive oil in a jar, shake to combine. Pour over salad ingredients.
