Ingredients:
3 shallots, finely minced
5 clove(s) garlic, finely minced
1 tablespoon(s) olive oil
1 tablespoon(s) sugar
1 cup(s) chopped tomatoes
1 sprig(s) thyme
1 sprig(s) basil, finely chopped
1/4 cup(s) white wine
1/2 cup(s) cream
1/4 teaspoon(s) liquid smoke
Directions:
1. Sweat shallots and garlic in olive oil. Add sugar, tomatoes, basil, and thyme and stir over medium heat for 3 or 4 minutes. Add salt and pepper. Deglaze pan with white wine and continue cooking for 2-3 minutes. Add cream and lower heat. Let simmer for 5-10 minutes. Adjust flavor with salt and pepper if needed. Puree with emersion blender or in small food processor or blender. Strain through chinoise and add liquid smoke. Reserve to use with Goat cheese souffle or Crab Cakes. Can be made in advance and refrigerated. Can be served hot, cold, or room temp.
