Smoked Sausage Surprise

Sitting at home one Saturday night, Hungry for something different, I decided to use some ingrediants that I try to keep stocked while trying to live on a fixed income. This is the extremely tasty result.
Ingredients:
1 1/2 lbs smoked sausage (or polska kielbasa, cut into 1/2 thick slices)
1/2 large sweet onion (minced)
3 -4 large potatoes (peeled and cut into bite size pieces)
1 (10 1/2 ounce) can cream of mushroom soup
1.5 (10 1/2 ounce) cans water (use soup can)
1 (6 ounce) can mushroom stems and pieces (well drained)
salt & fresh ground pepper
1 teaspoon thyme
1/2 teaspoon dill weed
2 teaspoons olive oil
8 ounces frozen corn
Directions:
1. In large skillet (preferably non-stick) over med high heat add olive oil and bring to smoke point.
2. Add onions and let cook just until starting to brown, add potatoes.
3. When potato edges are browned add soup and water and spices. return to boil and add mushrooms, Sausage, and corn.
4. Reduce heat to med low and allow liquids to reduce to 1/2 (liquid should thicken and turn a med brown in color.
5. Serve with tossed salad and crusty bread for a delicious and quick meal.
6. PS My fussy grandkids call this grandpas' supper and it's all they want when they eat at my place.
