For a crisp, fresh-tasting sandwich, toast the bread before assembling the ingredients.
Ingredients:
3/4 cup fat-free mayonnaise
1/3 cup low-fat sour cream
2 tablespoons finely chopped shallots (about 1 large)
1 1/2 tablespoons chopped fresh dill
1 teaspoon stone-ground mustard
1 teaspoon grated lemon rind
1/4 teaspoon black pepper
10 (0.6-ounce) slices light wheat bread,toasted
3 (3-ounce) packages sliced smoked salmon
2 1/2 cups gourmet salad greens
Directions:
1. Combine first 7 ingredients in a small bowl.
2. Spread 2 tablespoons mayonnaise mixture over each bread slice. Top 5 bread slices evenly with salmon slices and salad greens. Top with remaining bread slices, coated side down.
