Smoked Salmon Chowder

From Quick Fixes magazine. Be careful not to overcook the salmon.
Ingredients:
1 onion, finely diced
1 tablespoon butter
1 1/2 lbs potatoes, diced
2 cups chicken broth
2 cups milk
12 ounces smoked salmon, sliced in ribbons
1 lemon, juice of
chopped fresh parsley, to garnish
Directions:
1. Fry the onion slowly in butter until soft and translucent.
2. Add potatoes, broth and milk. Bring to a boil, reduce to a simmer, and cook until potatoes are tender, 15-20 minutes.
3. Add salmon, lemon juice and parsley. Cook just a minute or two until the salmon is warm.
