Ingredients:
1/2 cup finely chopped cucumber
1/2 cup low-fat sour cream
2 teaspoons chopped fresh dill
1 teaspoon bottled minced garlic
4 basic blintzes
1 (4-ounce) package smoked salmon, cut into thin strips
dill sprigs (optional)
Directions:
1. Combine cucumber, sour cream, dill, and garlic in a small bowl. Top each blintz with salmon; spoon sauce over salmon. Garnish with dill sprigs, if desired.
