this recipe is great on breads and crackers... the down side is it can be rather expensive... but if you serve other types of offerings a little will serve many guests.... the recipe and photo are from Finger Foods
Ingredients:
3/4 - pound smoked salmon, chopped
1/3 - cup plain yogurt
1/2 - teaspoon olive oil
2 - teaspoons grated lemon zest
2 - tablespoons fresh lemon juice
2 - tablespoons finely chopped scallions, keep white and green parts separate
Directions:
1. Fit your food processor with a metal blade and combine half of the salmon with the other ingredients except the scallion. Mix until smooth.
2. Stir in the remaining salmon and the white part of the scallions that you chopped.
3. Transfer to a serving dish, cover with plastic wrap and chill for 30 minutes.
4. Sprinkle with the chopped green scallions before serving.
5. goes great with all kinds of breads and crackers.
