Smoked Salmon and Goat Cheese Salad

Ingredients:
1/4 cup fresh lemon juice
1 tablespoon water
1 tablespoon minced peeled fresh ginger
1 tablespoon honey
1 teaspoon chopped fresh dill
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons extra-virgin olive oil
8 cups gourmet salad greens
8 ounces smoked salmon, sliced and cut into thin strips
1 (3.5-ounce) package goat cheese, cut into 4 equal slices
1/4 cup very thinly sliced red onion
Directions:
1. Combine first 7 ingredients in a blender; process 30 seconds or until smooth, scraping sides. With blender on, slowly pour oil through food chute; process until thickened.
2. Place salad greens on individual plates; top each evenly with salmon, cheese, and onion; drizzle with dressing. Serve immediately.
