Ingredients:
1/2 cup mayonnaise
1 finely chopped hard-cooked egg
1 minced gherkin (small sweet pickles)
1 tablespoon chopped scallions or 1 tablespoon chives
12 slices pumpernickel bread (cocktail-size)
smoked salmon
Directions:
1. Combine mayonnaise with hard-cooked egg, gherkins, and chopped scallion or chives.
2. Spread on pumpernickel slices.
3. Top each with a small piece of smoked salmon.
