Smoked Salmon and Chive Pasta

Elegant, simple and really tasty pasta dish.
Ingredients:
500 g pasta, of choice
2 tablespoons olive oil
1 tablespoon capers (optional)
1 (300 ml) carton cream
1 lemon, juice of
2 teaspoons dijon mustard
100 g smoked salmon, sliced
1/2 bunch chives, snipped
1/4 cup grated parmesan cheese
Directions:
1. Cook pasta in plenty of boiling water.
2. Heat oil in frying pan.
3. Add capers.
4. Fry for 1 minute or until capers burst.
5. Stir in cream.
6. Bring to boil.
7. Blend in juice and mustard.
8. Reduce heat.
9. Simmer until cream mix has thickened and the mix through salmon and chives.
10. Simmer, stirring for 1- 2 minutes.
11. Toss through drained pasta and parmesan.
12. Heat, stirring lightly for 2 minutes.
13. Serve with salad.
