Ingredients:
2 cups flour
4 teaspoons baking powder
1 cup grated cheddar cheese
2 tablespoons chopped thyme
1 egg
1/4 teaspoon freshly ground black pepper
1-3/4 cup milk
2 tablespoons melted butter
1/4 cup chopped smoked salmon
Directions:
1. Preheat oven to 400.
2. Prepare mini muffin pans.
3. In a bowl sift together flour and baking powder then stir in cheese, thyme and pepper.
4. Beat together egg, milk and melted butter.
5. Make a well in the center of dry ingredients and stir.
6. Fold in the salmon then spoon mixture into mini pans and bake for 12 minutes.
