This is a delcious vegetable soup which I made with leftovers. it looks pretty in the bowl, tasted great and yes there are no potatoes in this recipe. Of course add or substract stuff you like in soup. I made this in the crockpot Non vegetarian may use chicken broth as the liquid Serve with crusty bread and a salad, and what a healthy, yummy, light meal! Read more !
Ingredients:
2 tbs olive oil
1 cup fresh cut up green beans
1 pt cherry tomatoes plus 1 large tomato coarse diced
2 cup fresh frozen thawed kernal corn
2 cup sliced fresh mushrooms ( mixed or any kind you ike )
2 cups assorted chopped bell peppers - red, yellow and green )
2 large carrots cut in rings
1 tbs chopped fresh minced garlic
1 small bunch parsley chopped
1 large whole shallot chopped
6 cups vegetable broth or water-( or reconsituted vegetable boillion )
2 tsp smoked paprika or to taste
salt and fresh cracked black pepper to taste
Directions:
1. Place everything in large soup pot or crockpot.
2. For stove top, bring to boil, cover and simmer until everyhgin is tender
3. Then season to taste
4. For crockpot cook 4 to 6 hours on high or low setting and then season to taste
5. if desired may use hand blender to further chop and puree a bit of the soup if desired for consistency etc.
