Smoked Mackerel Pate in Lemon Cups

It looks really pretty and you can make it ahead of your party. Pop it on a pretty plate, stick a bay leaf on top and serve with toast triangles.
Ingredients:
350 g smoked mackerel fillets, skinned
150 g butter, softened
150 ml sour cream
2 -3 tablespoons lemon juice
salt and pepper
1 pinch cayenne pepper
6 lemons
6 small bay leaves
toast, triangles
Directions:
1. Put the mackerel, butter, soured cream and lemon juice into a blender or food processor and blend until smooth. Add the seasoning to taste.
2. Cut the tops from 6 lemons and carefully remove the flesh. Spoon the pate into the lemon shells. Top with the bay leaves.
3. Chill.
