mini muffins using smoked cheddar cheese and a variety of toppings
Ingredients:
smoked cheddar mini muffins
1/2 cup all-purpose flour
1/2 cup yellow cornmeal
2 tablespoons raw sugar
1 1/2 teaspoons baking powder
1/8 teaspoon kosher salt
cayenne pepper
3/4 cup smoked cheddar cheese, shredded
1 egg
1/2 cup buttermilk
2 tablespoons butter, melted
toppings: bacon bits, poppy seeds, sesame seeds, shredded cheddar cheese
Directions:
1. Preheat oven to 425F degrees.
2. Lightly grease mini muffin pans.
3. In medium bowl, stir together flour, cornmeal, sugar, baking powder, salt and dash of cayenne pepper.
4. Stir in 3/4 cup cheese. In small bowl,combine egg, buttermilk and melted butter.
5. Add egg mixture all at once to flour mixture.
6. Stir until just moistened.
7. Batter will thicken upon standing.
8. Spoon batter into prepared muffin pans.
9. Fill 3/4 full.
10. Sprinkle tops with desired toppings.
11. Bake for 8 to 10 minutes or until toothpick inserted comes out clean.
12. Cool in muffin cups on wire rack for 5 minutes.
13. Remove from muffin tin and serve warm.
14. Note: muffin yield depends on size of tins. largewr muffins take longer to bake!
