Slow Roasted Tomatoes

Adapted from a Martha Stewart recipe. These are amazing on their own as a side dish or with pasta.
Ingredients:
8 large tomatoes
4 tablespoons kosher salt
3 tablespoons fresh ground pepper
1/4 cup sugar
3 tablespoons dried thyme
2 tablespoons olive oil
Directions:
1. Heat oven to 250.
2. Slice tomatoes thickly, to yield about three slices per tomato.
3. Place on a baking sheet.
4. Mix spices and sugar.
5. Brush tomatoes with olive oil, and sprinkle with a large pinch of seasoning mixture.
6. Roast the tomatoes for 3 hours.
