Another family recipe that I love. It makes beans that are sweet (due to the sugar ham) but also spicy.
Ingredients:
1 lb red kidney beans
1 -2 slice ham (center-cut slice with bone)
1/4 cup brown sugar
8 ounces canned pineapple chunks (will be used only to season ham and not put in beans!)
12 ounces little smokies sausages
1 green bell pepper
1 tablespoon garlic (minced)
seasoning salt (to taste)
hot sauce (to taste)
1 bay leaf
1/2 large white onion
2 stalks celery
Directions:
1. Rinse beans three times with cold water.
2. Let soak for an hour or overnight.
3. Rinse ham and put in hot skillet and cover with brown sugar and pineapples and bring to a boil. Cook until red and curling. Remove only ham from the skillet and cut it into big pieces.
4. Chop bell pepper, onion, celery and put in crockpot. Add bay leaf, garlic and seasoning salt and ham. Add beans and water to where it is 2 inches above beans. Then cook on high for two hours then low until beans are done (about one more hour).
5. Serve with rice and cornbread and a few dashes of hot sauce.
