I absolutely love carnitas, especially in tacos or tortas. But I hate the splattery mess it makes if you cook it the traditional way in Lard. So I decided I need a way to make it without so much lard and a way to throw it in the slow cooker. Read more . I love this version. Hope u like too!
Ingredients:
3-4 lb pork butt or shoulder, most fat trimmed off.
1 to 1 1/2 cup of chicken broth
1/4 cup of veg oil
1 tsp of salt or to taste
3 garlic cloves smashed
pepper to taste
1/2 tsp of oregano
1/4 tsp cumin
Directions:
1. Cut pork but into fourths. In a large skillet heat the veg oil until hot. Season pork liberally with salt and pepper. Add to pan, and let brown nicely. Once all sides are browned transfer to crockpot, juices and all. Add 1/2 cup of chicken broth, smashed garlic, and remaining seasonings. Cook on low for 6-8 hours, or on high for 4-5 hours. Shred with fork and add to tacos, or filling for burritos or tortas!!ENJOY!!!
