This recipe was published in Real Simple magazine as a solution to mealy tomatoes. Roasting tomatoes in a low oven over several hours concentrates their flavor and moistens their flesh.
Ingredients:
3 medium tomatoes
6 garlic cloves
6 sprigs thyme
3 tablespoons olive oil
1/4 teaspoon kosher salt
1/4 teaspoon pepper, freshly ground
Directions:
1. Heat oven to 300 degrees.
2. Slice the tomatoes in half and squeeze out the seeds.
3. Place the tomatoes, cut-side up, in a small baking dish and scatter on the garlic and thyme.
4. Drizzle with the oil and sprinkle with salt and pepper.
5. Bake until the tomatoes are soft but still hold their shape, about 2 hours.
