I came up with this when I was getting ready to make Sloppy Joes, but was craving some ZING! The ZING! is in the chipotle pepper sauce and I will state again that is it kind of HOT. I enjoy spicy foods and this recipe is a product of that enjoyment. You can freeze the leftover chipotle peppers and sauce for adding zip to mayo or other white sauces or for adding to other dishes. It is neat stuff to experiement with! Hope you like the recipe, it is fast and easy!
Ingredients:
1 lb ground beef (beef or turkey)
1/2 chopped onion
1/2 chopped green pepper (optional)
1 tablespoon minced garlic
1/2 tablespoon cumin powder
1 teaspoon adobo sauce, from a can of chipotle peppers (or more, this is hot use at own risk)
salt and pepper
1 (8 ounce) can tomato sauce
1 cup grated cheddar cheese or 1 cup mexican blend cheese
chopped green chili (optional)
sliced black olives (optional)
hamburger buns or hispanic roll (optional)
Directions:
1. At medium to medium high heat brown the meat with the onions, green pepper, and garlic.
2. Drain off the fat.
3. Pour in tomato sauce, chipotle sauce (this stuff maybe too hot for some people, if you DO NOT like spicy foods use less or don't use it at all- start with a small amount and add more according to taste), cumin powder and grated cheese.
4. Stir until cheese is completely melted.
5. Allow sauce to thicken.
6. Reduce heat to low and stir in salt and pepper if desired.
7. You may now add olives or chiles if you desire.
8. Put thickened meat mixture on hamburger buns- OR if you can find the little bollo or bonito (can't remember the name) rolls at your grocery store use those if you like.
