We love this simple way to make quick and easy comfort food. It really makes enough for 4, so we save the leftovers for lunch.
Ingredients:
1 lb ground beef
2 tablespoons chili powder
3/4 cup water
1 (14 ounce) can rotel, original
1 (6 ounce) can tomato paste
4 hamburger buns
1/4 cup grated cheddar cheese
1/2 small onion, chopped
Directions:
1. Brown ground beef and drain. Add water and Chile powder. When mixed in, add Rotel and tomato paste. Let simmer and cook down 20-30 minutes.
2. Spoon over toasted buns. Top with chopped onions and grated cheese.
3. Serve with salad, mac & cheese, chips, pickles, potato salad, fettuccine alfredo, or any other veggie or starch side.
