Easy recipe to make sloppy joes with things you usually have on hands. Little ones will like the individual sized cups and it's easier to eat with a fork so you can avoid messy hands. There are a lot of recipes for similar things that use packaged Pillsbury biscuits, but I usually have Bisquick mix and don't always have packaged biscuits to make. Enjoy
Ingredients:
1 lb ground beef
1 onion, finely chopped
3 garlic cloves, crushed
1/2 large green bell pepper
1/2 large red bell pepper
1 cup ketchup
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon barbecue seasoning
2 tablespoons brown sugar
1 tablespoon mustard
1/2 cup water
Directions:
1. With a drizzle of olive oil, brown hamburger, onion, garlic green and red peppers on medium to med/high heat.
2. Drain grease and add remaining ingredients, stirring well.
3. Add remaining ingredients and simmer while preparing the muffin tins.
4. Spray muffin tins with Pam cooking spray.
5. Prepare Bisquick mix as directed (mix 2 1/4 cup mix with 2/3 cup of milk).
6. Use a spoon sprayed with Pam cooking spray to make the cups.
7. Spread dough to the edges and make a dimpled area to spoon in the meat.
8. Spoon the meat into the muffins tins you filled with dough.
9. Sprinkle with parmesean cheese.
10. Cook around 10-15.
11. (Suggestion to use shredded cheddar cheese in the final minutes of cooking, haven't tried that yet).
