Slightly Spiced Artichoke Squares |

Modified recipe that went over well with the cousins at Thanksgiving. Ingredients:
14 ounces artichoke hearts |
1 tablespoon olive oil |
1/3 cup green onion |
1/4 teaspoon oregano |
1/4 teaspoon cayenne |
1/4 teaspoon salt |
2 cups cheddar cheese |
2 eggs |
1 1/2 cups flour |
1/4 teaspoon salt |
1/3 cup oil |
1/3 cup fat-free half-and-half |
Directions:
1. Heat oven to 350°F Spray/grease 13x9 pan. 2. To make filling combine cut drained artichoke hearts, green onions, spices, cheese, and eggs. Set aside. (I usually use an egg substitute) 3. For crust combine flour, salt, oil, and half 'n half. Mix with fork until crumbly. Spread on pan and press down. 4. Add filling to crust and bake for 30 minutes, until set. Serve warm or at room temperature. |
