Sliced Tomatoes With Pesto Dressing

SLICED TOMATOES WITH PESTO DRESSING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Whitcomb Estate in Richardson Texas in 1994.
Ingredients:
2 tablespoons red wine vinegar
1/4 cup fresh basil leaves
1 clove garlic minced
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 cup parmesan cheese grated
1/3 cup olive oil
3 large tomatoes
Directions:
1. In blender combine vinegar, basil, garlic, salt, sugar, cheese and oil.
2. Process until smooth and well combined.
3. Let stand at room temperature for 2 hours to blend flavors.
4. Stir well with a whisk or fork before using.
5. Core tomatoes and slice then arrange in a shallow bowl.
6. Grind pepper over tomatoes then drizzle tomatoes evenly with pesto.
7. Serve immediately.
