There is a wonderful B&B on the Oregon coast that makes these great cookies. I lost the recipe once, and asked them if I could have it again, and they were so gracious to send it to me. I am posting it here in case I ever lose it again! This makes 12 dozen cookies, but I make the dough and leave it in the freezer until I want to make some.
Ingredients:
3 cups brown sugar
1 lb butter, softened
2 eggs
4 cups flour
2 teaspoons baking soda
1 tablespoon cinnamon
2 teaspoons ginger
1 teaspoon salt
2 teaspoons vanilla extract
2 cups chopped walnuts
3 cups chocolate chips
powdered sugar
Directions:
1. Cream the butter and brown sugar, then add the eggs. In separate bowl combine the flour, soda, cinnamon, ginger and salt. Add this mixture slowly to the butter mixture, add the vanilla and blend all well. Add the nuts and chocolate chips. Refrigerate mixture covered, overnight.
2. Form dough into 1 balls. Put balls in ziplock bag with powdered sugar and shake to coat. Bake on ungreased cookie sheet at 350 degrees for 10 minutes.
