A light and healthy side to go with the Lovely Luna's Hoisin Marinated Pork
Ingredients:
salad
1 small head each of green cabbage and purple cabbage, cored and shredded
1 medium red onion, very thinly sliced
3 carrots diced
1 cup salted cashew pieces
dressing
8 t. mayonnaise (lite is ok)
4 t. lite sour cream
5 t. seasoned rice vinegar
juice of 1 lime
3 t. thai sweet chili sauce
red hot sauce, like tabasco or tapatio to taste if needed
a little water to thin if necessary.
Directions:
1. Combine salad ingredients. Combine dressing ingredients. Thin with water so that the consistency is thick but pourable. One hour before serving, toss with salad ingredients.
2. Serves 8-10
